OYSTER STEW RECIPES

Lucille Wilson's Oyster Stew
(Makes 4 Servings)

  • Drain and rinse thoroughly in colander one 10 Oz. jar of oysters
  • Place in pan. Add 10 Oz. water and , if desired, between 1 teaspoon and 1 tablespoon finely chopped onions.
  • Boil from 3 to 5 minutes.
  • Remove oysters to cool, saving broth. Cut oysters into small pieces and return to pan with broth.
  • Thicken with 2 tablespoons flour mixed with water. bring to boil.
  • Add 2 cups milk. (as rich as your diet allows.) and a lump of butter. Season to taste with salt and pepper.
  • Optional: add a dash of tabasco

Nancy's Variation of Oyster Stew
For those allergic to milk
(Serves 2-3)

  • Drain and rinse one 10 Oz. jar of oysters

  • Thicken with 2 tablespoons rice flour mixed with water. bring to boil
  • Add 1 can (14 1/2 Oz. ) full strength chicken broth.
  • Season to taste with salt and pepper.
